The only way to achieve that completely flat and smooth laid tile floor with large format without the break between the two sections is to have the entire room slope as holly says. I think this is relatively new to many professionals so there is some reluctance due to limited knowledge and experience. A center drain format will not allow for the slope needed with larger tiles.

Linear drains allow the use of lft large format tiles eliminating the extra grout joints typically required when installing mosaic tile. I loved the look of the linear drain but our budget didn t allow it.
